につき has two uses, both typical of signs, notices and official writing.
Due to: it gives the reason for a notice: 工事中につき、立ち入り禁止, "no entry: construction in progress"; 本日は定休日につき, "as today is our regular holiday".
Per: it gives a rate: 参加費は一人につき千円です, "the fee is 1,000 yen per person"; 一回につき, "each time".
It's very formal and compact. In conversation, the reason would be ので or ため, and the rate あたり or に. Don't confuse it with について, "about", even though the two look very alike on a page.
Examples
工事中につき、立ち入り禁止。
No entry: construction in progress.
本日は定休日につき、お休みさせていただきます。
We're closed today for our regular day off.
参加費は一人につき千円です。
The fee is 1,000 yen per person.
雨天につき、試合は中止します。
The match is cancelled due to rain.
一回につき、三百円かかります。
It costs 300 yen each time.
