っぽい makes an い-adjective meaning "-ish" or "having the feel of": 子どもっぽい, "childish"; 白っぽい, "whitish"; 風邪っぽい, "like I'm coming down with a cold".

After a ます-stem, it describes a tendency, usually a bad one: 忘れっぽい, "forgetful"; 怒りっぽい, "short-tempered"; 飽きっぽい, "quickly bored".

It conjugates like any い-adjective: 子どもっぽくない, 忘れっぽくなった.

Compare らしい, "typical of, as it should be": 子どもらしい is a compliment ("like a real kid"), while 子どもっぽい is a criticism ("childish"). In casual speech, っぽい also means "seems like": あの人、先生っぽいね, "that person seems like a teacher".
